Saim-Hann will be my paint n play army this summer. Trying to lock down basics.

Which scheme do you like the most?

Of the three I'd say go with #1.

I really like the idea of #2 - but think it needs to be bone/ivory rather than white.

I actually tried the bone / Ivory look which I tend to really like with Eldar, but I found it looked really dirty when I put them on bright blue and white snow bases. That said, these obviously haven't been highlighted, layered, etc. The white is kind a nightmare to paint, so I might go red and black just to keep the painting quicker. I'm begining to lean toward option #1 although I really liked #3 at first.

I recommend watered-down light gray GW foundation paint (forget the name) for doing white over black primer - one and done.

I would never do that much white over black. Just use a white basecoat.

I prefer #1 anyway, especially as you describe the base.

Any ideas on a good source of singing spears? The why elf spear shafts look really fat...

#1 is very similar to the Void Dragons colour scheme that I'm doing, so I'm partial to it, obviously; but #3 caught my attention first of the three.
